John Richmond, owner of Maglieaux’s Riverfront Restaurant, shares his favorite recipes for leftover turkey. “Nearly every year, I try to buy an ‘extra’ turkey for Thanksgiving just so I can be sure to have leftover turkey for two super easy turkey dishes: Turkey Melt Sandwiches and Turkey & Sausage Gumbo! There is nothing difficult about either recipe, but before you can make either dish, you’ve got to cook the turkey! Between these two dishes, not one ounce of turkey is wasted!
